The Anova Precision Cooker is the great equalizer, putting home cooks on a level with restaurant kitchens without a need for expensive, industry-grade equipment or fussy, imperfect DIY hacks. With it, anyone can easily cook food to a precise temperature while monitoring and controlling progress on an iPhone. All you have to do is attach the Anova to a pot of water, throw your food into a ziplock bag, set time/temperature (or select the food item you’re cooking in the Anova app, which comes with preset time and finishing temperature), and that’s it. You’re done.
If this sounds like sous-vide cooking, which is also done in a circulating water bath, its because it basically is. As the Anova Kickstarter page explains, however, because sous-vide is a French term referring to vacuum-sealing food, which cooking with the Anova does not require, “precision cooker” is a more accurate term for the product. Call it what you want; a revolution by any other name will taste just as sweet.
